Our Story
Fresh Street Tacos, Built for Your Crowd
Street-style taco service for corporate events, schools, and neighborhoods who love tacos.
We assemble and finish every taco on site with fresh house-made salsas, so your guests get real street-style flavor with a line that keeps moving. Tell us your headcount and timing, and we'll build the service around it.
Our Story
Guests kept asking, so we built it
Denver Street Tacos started in 2022 because the people we were already serving asked for it. Our team had been running food trucks for other event concepts since 2016, and the companies, schools, and event planners who knew our communication and style of service kept telling us they wanted tacos on the menu too.
We'd been quietly working toward a dedicated taco truck already, including a stretch partnered with someone else on the idea. Once it was clear we each saw the business running a different way, we split off to build it our own way β which meant doubling down on fresh house-made salsas, menu flexibility, and communication with every host about spice level, dietary needs, and what their group actually wants.
Today, that's still the whole point: bold flavor and quick lines without cutting corners on what's real. From the carnitas β built on a citrus and chili-powder pork we learned to love from an old chef who knew exactly what he was doing β to the standard-plate system that keeps a rush moving, everything we do is built around guest flow and a menu people recognize the second they see it.
They wanted tacos on the menu too β so we built a truck for exactly that.

How Service Works
How Service Works, Start To Finish
Denver Street Tacos runs like a well-oiled line, not a guessing game. We show up early, bring everything up to temperature on site, and build fresh house-made salsas right before service β so every plate tastes like it just came off the grill.
Once the window opens, our team splits roles: one person takes orders, the rest plate and serve. It's a taco setup built around guest flow, keeping the line fast without cutting corners on flavor.
1
Arrival & Setup
Team arrives 30-60 minutes early, checks in with the host, and sets the line.
2

Meet The Team
The People Behind Your Taco Line
Every plate that hits your event comes from a team that plans ahead, communicates fast, and keeps the line moving without cutting corners on flavor. Reach out and you'll talk to the same people who have ran the window on hundreds of events.
David
Senior Booking Agent
David's approach to street-style taco service is shaped by the volume he's handled elsewhere β 30 straight days feeding Chevron crews 1,500 meals a day, and a Covid stretch keeping FedEx supplied at roughly 1,200 meals a weekend. That background is why he's quick to pivot from truck to buffet if equipment fails mid-event, and why he pushed for Colorado's statewide health and fire reciprocity bill, easing the jurisdiction hassle that once slowed taco service down for events on the move. Our team helps plan taco service around menu, timing, guest count, and setup, with David making sure fresh tortillas, toppings, and familiar favorites hit the line without a hitch.
Brandon
Senior Booking Agent
Front-of-house shifts, expediting, and banquet setup at Red Robin and Isle of Capri in Black Hawk gave Brandon his start back in 2003, and 12 years later that grounding still shapes how he builds street-style taco service for events, backed by 6 years working hands-on with trucks, smokers, and live kitchens. Groups like Amazon, Starbucks, the Denver Broncos, the Denver Nuggets, Southwest Airlines, Harvard, and Texas A&M have leaned on that experience, and across Denver, Fort Collins, Miami, Fort Lauderdale, Boston, and San Francisco he's built a taco setup around guest flow β fast response, clear communication with our catering teams, and no hesitation to swap in a new team fast if service, reviews, food quality, or presentation fall short. Brandon's take on bold flavor and quick lines: keep the menu simple, since fewer options let a truck deliver fresh tortillas, toppings, and familiar favorites without ever slowing down.
Jess
Food Truck Booking Agent
Jess believes real street tacos let the seasoned meat lead, not a pile of cheese and sour cream β the same simple logic she applies to planning taco service for events, starting with the crowd's demographic mix, vendor meals, and service style rather than headcount alone. That approach carried a 5,000-guest Southwest Airlines event and a 5-day stretch prepping 10 trucks for 50 events and roughly 7,500 guests, with every truck sent out carrying the right menu and inventory for bold flavor and quick lines. She also clears insurance, safety compliance, references, and fire-risk gaps beforehand, part of how our team helps plan taco service around menu, timing, guest count, and setup.
John
Food Truck Booking Agent
John's edge is pairing the right street-style taco setup with the right event, then working backward through permitting, parking, COIs, and timing so nothing catches him off guard. Denver fire inspections and permit work built that foundation, and it's carried him through truck bookings in Los Angeles, Orlando, Miami, Sacramento, Washington, DC, and beyond, always with an eye on fresh tortillas, toppings, and familiar favorites holding up under real service pressure. His resume includes a well-earned rescue: when a trailer's tow vehicle lost a radiator hose on the way to an Ontario event, John got the driver into a rented replacement and the tacos on-site right on schedule, which brought the client back the next year.
Kaleb
Food Truck Booking Agent
Kaleb thinks a great taco starts simple: the protein leads, everything else supports it, and that same instinct carries into how he plans street-style tacos for events. With 6 years in food service and 5.5 hands-on in kitchens and on trucks, he once got a substitute truck coordinated in under 20 minutes after a catering truck's wheel bearing failed en route, and he separately pivoted a 200-guest wedding from buffet to food truck service with just 30 minutes' notice. Before he'll help plan taco service for your event, he confirms current fire extinguishers, valid health and fire licenses, and labeled, organized coolers β his advice for any setup built around guest flow is simple: a spot to park and a crowd to serve.
Simon
Food Truck Booking Agent
Fresh, well-seasoned proteins and simple builds are what Simon looks for in street-style tacos, and a decade in catering β 7 years on trucks, 3 more leading prep kitchens for up to ten trucks a day β is what he brings to planning taco service around your guest count. He's helped run recurring Southwest Airlines service near 1,200 employees per event, brand work with Kroger, Amazon, and FedEx, and a fall festival that nearly tripled from 100 guests to almost 300, where he drove back for extra inventory rather than let the line slow down. Ask him for his one rule: trim the menu to the favorites, and bold flavor and quick lines take care of themselves.
Stephen
Food Truck Booking Agent
Stephen didn't start behind a booking calendar β he started cooking, driving, and serving on more than a dozen food trucks, work that later put him in charge of a 12-truck operation and corporate events for 1,000-plus guests, including a single day that saw over 3,000 meals prepped. A trailer hitch failure once threatened to sideline a catering truck entirely, but Stephen rallied a re-hitch crew and still had it in place 50 minutes before service, the same resourcefulness that let him build a full next-day event from scratch in under an hour. For street-style tacos, he leans on that same instinct β real cotija and queso fresco over generic toppings, and a menu trimmed to two entrΓ©es so bold flavor and quick lines go together.
Thomas
Food Truck Booking Agent
Compliance is where Thomas earns his keep: COIs, permits, insurance minimums, and reliable past performance all get checked against Denver Department of Public Health & Environment and Denver Fire Department standards before a taco truck is cleared for street-style tacos for events. His eye for quality shows in the small stuff, like tacos assembled fresh enough to hold their texture through a busy line, and in the mid-event generator failure he traced to a low-oil shutdown, topping it off to keep bold flavor and quick lines moving with barely a hiccup. His advice for hosts stays the same regardless of guest count: plan the service flow, not just the menu.
Zo
Senior Booking Agent
Zo judges street-style tacos for events the way a career operator would: 16 years running trucks, smokers, and kitchens firsthand, plus oversight of thousands of catering and food truck bookings, including a single day pulling off eight large holiday events with a minimal crew. A culinary degree, ServSafe certification, and past work with Quest Diagnostics, Monster Energy Drink, St. Joseph Hospital, and NFL LA Chargers staff back up his eye for bold flavor and quick lines, and he keeps Douglas County and Castle Rock fire expectations in mind so fresh taco service, fresh tortillas, toppings, and familiar favorites, stays on track from setup to last guest.
